I think it’s safe to say that during the holidays there is no shortage of tacky sweaters, credit card debt, and calorie filled meals. Now I love a cheesy potato casserole filled with two sticks of butter as much as probably more than the next person, but as the New Year comes around it’s nice to take a step back and balance out the tray of Christmas cookies that was consumed with something lighter…like a salad.
I know. You’re probably thinking, ugh gross, salads are boring af. But I’m here to prove you wrong. Not only are salads healthy, but if done the right way they can be filling as well!
If I time it right and beat the line in the Downtown Tunnels, my go-to salad is from Salata and is usually a spicy-sweet mix filled with things like green peppers, jalapeños, pineapple, corn and a fun dressing! Below is a pic of my latest concoction which contained spring mix, green peppers, celery, radishes, bean sprouts, corn, pepperoncini, jalapeños, tofu, and the ginger lime vinaigrette.
If you’re recovering from the sugar crash from the holidays, it may be hard to pull together a cohesive salad by yourself. But lucky for you Salata teamed up with the Houston Academy of Nutrition and Dietetics to create a few salad and salad wrap combos that serve as a great alternative to super heavy holiday meals. One combo that would serve as a great lunch or dinner is filled with romaine lettuce, red onion, bell pepper, corn, black beans, cheddar cheese, avocado, cilantro, (and then if meat’s your thing: bacon and spicy chipotle chicken) with chipotle ranch dressing. Yum! Texmex in a bowl!
